Water Lotus, Nelumbo nucifera. The Thais use lotus blossoms, joss-sticks, and candles when paying homage to Buddha images. However, lotus is useful in other ways. The petals, stamens and roots are major ingredients of various recipes prescribed by traditional herbalists. Most of the lotus is edible: dried seeds are boiled in syrup and served with crushed ice as a desert; the seeds may also be roasted and eaten like peanuts; the root is slices and boiled with pork ribs to make a soup; the leaves and stems are added to a variety of dishes. The inedible large leaves are used to wrap rice and then the package is steamed.

Mangrove restoration. Lake Songhkla (left). Mangroves near Trang in southern Thailand. Mangrove restoration projects have become common as more people realize the ecological and economic importance of mangrove forests. Many coastal areas have been altered for shrimp ponds and other aquaculture projects but after a time these man-made environments become less productive and are abandoned. Now, some of these areas are being restored as mangrove forests. The loss of mangrove forests has also resulted in a decline of fisheries, since many species of fish use the mangrove as a nursery.
